Receta Incredible 3 Way Apple Soup
Incredible 3 Way Apple Soup combines apples, apple cider, and dried apples in a delicious soup with a hint of bacon flavour. Gluten, nut and dairy free. Made in 30 minutes.
Ingredientes
- 2 pounds of Apples (peeled, cored & cut into chunks) Your choice of variety
- 1 pound of Parsnip (peeled & roughly diced)
- 2 tbsp. butter
- 1/2 tsp. ground ginger
- 1 tsp. cinnamon
- 1 1/2 cups fresh apple cider
- 2 cups onion broth
- 1 tsp. fresh lemon juice
- 1/4 tsp. garlic powder
- 1 tbsp. bacon flavoured olive oil (and more for garnish)
- 1/4 tsp. smoked sea salt
- Pepper to taste
- 1/2 cup sliced dried apples (for garnish)
Direcciones
- Prepare apples and parsnips and set aside in a bowl
- Heat butter in a heavy bottom pot over medium heat
- Add apples, parsnip, ginger, cinnamon, salt & pepper
- Sauté for 10 minutes
- Add lemon juice
- Add apple cider and onion broth
- Bring to a boil, reduce and cook for 10 minutes (apples & parsnips should be fork tender)
- Remove from heat
- Using an immersion blender, pureé until smooth
- Add bacon oil
- Ladle into bowls
- Garnish with dried apple slices, and additional bacon flavoured oil
