  1. Prep: 10 minutes, Cook: 40 minutes. Preheat oven to 350 F. Pour minced tomatoes into a fine sieve set over a bowl. Reserve 1/3 c. of the juice. Set remaining tomatoes aside. Combine reserved tomato juice, next 6 ingredients and salt and pepper to taste in a mixing bowl. Mix thoroughly. Add in grnd chicken and knead with hands. Transfer mix into a shallow, oiled baking dish or possibly into a large pie plate, pushing up the sides of the chicken mix to create a shell. Bake 25 min. Drain excess liquid. Sprinkle mozzarella over partially baked mix. Add in remaining tomatoes, sprinkle with Parmesan and bake 15-20 min longer till chicken is cooked throughout.
  2. Let stand 5 min before cutting into wedges.
