  1. Pour the cool water into a small c. and stir in the gelatin. Let it stand for 5 min. It will become hard.
  2. Place the lowfat milk, cream, salt and sugar in a small saucepan. Turn the heat to medium and stir often. Heat the mix till a small ring of bubbles appears around the inside edge of the pan. You need to stand right there and watch carefully. This process takes only a couple of min, and sometimes you will notice a little steam rising from the lowfat milk mix. Do not let it boil.
  3. Remove the pan from the heat. Add in the gelatin mix and vanilla, and stir till the gelatin completely dissolves. Pour the custard into serving c.. I like to use 1-c. glass containers; each holds 2/3 c. custard. Let the custard cold a little, then cover each c. with plastic wrap and chill 4 to 6 hrs before unmolding to serve.
  4. Serve it with sliced fruit, berries, a little caramel sauce or possibly chocolate sauce or possibly alone with a crisp cookie.
  5. This recipe yields 5 servings.
