  1. Add garlic cloves to food processor. Pulse until rough chopped.
  2. Add green onions, ginger, and habanero. Pulse until diced.
  3. Add lime, soy, allspice, salt, sugar, pepper, cinnamon, nutmeg, and oil. Process marinade until pureed.
  4. Recite secret Jamaican Jerk incantation while transferring marinade to a ziploc bag and combining with the tenderloin. Marinate for 8 hours or overnight.
  5. Grill pork on all sides on the warm side of grill, then finish on a cool area of the grill. Test thickest part of tenderloin with thermometer. The cooked pork will give under pressure of tongs and release amber juices.

    We had this tonight. It was delicious. The flavor is really infused the pork beautifully. We served it with a mixture of brown/white rice cooked in chicken broth and mixed with black beans. It was a great combination. A cuban style feast.
    If you are serving to people with mild taste buds, try using just 1-2 serrano peppers. With 3 it is quite spicy. Cook a portion of the tenderloin with no serranos for the kids.

      This is so delicious! Nancy is right, it is a little spicy for kids (my kids are not as adventurous as hers are so I always have to make two versions of every dinner) but my husband and I really loved the intense flavors - the cloves and the ginger and the nutmeg and the chiles it was so unique but a great combination of flavors. I will definitely be making this again.

        Additional tips:

        For sweeter flavor add some orange juice and substitute brown sugar.
        For some savory twists try substituting a milder, more flavorful pepper and add chili paste to compensate.
        In either case you can go gung-ho and grind it up in the mortar and pestle!
