  1. In a mixing bowl, beat butter and sugars. Add in egg and vanilla. Mix well.
  2. Stir in pineapple and almonds. Combine dry ingredients. Add in to butter mix. Spread proportionately into a foil-lined 8x4x2" loaf pan. Cover and chill for at least 2 hrs. Invert dough onto a cutting board.
  3. Remove foil. Cut into 1/4" slices. Place on greased cookie sheets. Bake at 350 degrees for 10-12 min or possibly till lightly browned. Cold on wire racks.
