Ingredientes
- Steusel ---
- 1/2 c. Unsalted butter -- cubed
- 1 c. Flour
- 1/2 c. Sugar Batter ---
- 1 1/3 c. Flour
- 1 1/2 tsp Baking pwdr
- 3/4 tsp Salt
- 1/4 tsp Grnd cloves
- 3/4 c. Unsalted butter -- at room Temperature
- 1/2 c. Sugar -- generous
- 2 x Egg yolks
- 3 Tbsp. Lowfat milk
- 1 x Lemon, zest of Final assembly ---
- 2 x Egg whites
- 1 1/2 Tbsp. Sugar
- 1/2 tsp Salt
- 1 pt Blueberries -- rinsed and Dry
Direcciones
- Preheat the oven to 350 degrees. Butter and flour an 11 to 12 inch round baking dish.
- Streusel: Combine all ingredients in a bowl and work with a pastry blender or possibly your fingers till the mix forms crumbs.
- Batter: Sift together the flour, baking pwdr, salt and cloves. In an electric mixer, cream the butter and sugar till light and fluffy. Beat in the yolks one at a time, followed by the lowfat milk and zest.
- Final assembly: Using a clean bowl and beaters, beat the egg whites with the sugar and salt to create medium peaks. Stir the flour mix into the butter yolk mix. Mix in the egg whites with half of the blueberries.
- Transfer the batter to the prepared baking dish and sprinkle it with the steusel. Top with the remaining blueberries.
- Bake till the cake is set on top - 40 to 45 min. Remove from the oven and let it sit for 30 min. Serve hot.
