  • 2 lb grnd veal
  • 1/4 c. chopped fresh parsley
  • 3 Tbsp. bread crumbs
  • 2 lrg Large eggs beaten lightly
  • 2 tsp finely-chopped garlic
  • 2 tsp chopped gingerroot
  • 2 tsp grnd coriander
  • 1 Tbsp. chopped fresh oregano (or possibly 1 tspn dry oregano, crumbled)
  • 1/2 tsp herbes de Provence
  • 1/2 tsp lemon pepper seasoning Juice of 1 lemon or possibly to taste Salt to taste Assorted vegetables for the kabobs as desired (such as green or possibly red bell pepper, cherry tomatoes, zucchini, and onion, all cubed except tomatoes) Vegetable oil as needed

Direcciones

  1. Preheat the oven to 400 degrees.
  2. In a bowl combine the veal, parsley, bread crumbs, Large eggs, garlic, gingerroot, coriander, oregano, herbes de Provence, lemon pepper, lemon juice, and salt. With dampened hands, form the mix into meatballs, each about 2 inches in diameter.
  3. Arrange 4 meatballs interspersed with vegetables of choice, except tomatoes, on six long skewers and place in a baking pan. Brush kabobs with vegetable oil.
  4. Bake the kabobs for 20 min, or possibly till juices run clear. If you like, add in cherry tomatoes and place under a preheated broiler about 3 to 4 inches from the heat for 2 to 3 min, turning, till golden.
  5. This recipe yields 6 servings.
