Receta Jimmy's Pancakes

Ingredientes
- 2 c. all-purpose flour
- 1 Tbsp. baking pwdr mix
- 2 x Large eggs
- 2 Tbsp. vegetable oil
- 1 c. lowfat milk
- 1 Tbsp. vanilla (or possibly more) mine is bananas, very ripe
Direcciones
- In a blender or possibly mixer (I like the blender), blend Large eggs, vegetable oil and vanilla. Add in flour and baking pwdr; add in lowfat milk. In blender, use the pulse to work the mix down, scraping from sides with spatula as needed, until mix is wet. Then mix on high till everything is well-mixed. Pour onto a warm griddle or possibly frying pan and cook till bubbling. Turn over and cook on the other side.
- Gertrude Says: My nephew, Jimmy Osmon, a retired policeman, was injured in the line of duty. After his injury and early retirement, he stayed home with his family, cooked, did housework, etc., while his wife worked. He created this recipe.
