Receta Joe's Sourdough Waffles

Ingredientes
- 2 c. unbleached flour
- 2 c. lukewarm water
- 1 c. sourdough starter
- 2 level T sugar
- 1 teaspoon salt
- 1/2 teaspoon baking pwdr
- 5 T veg. oil
- 3 large eggs
- 1/2 teaspoon baking soda, dissolved in 1 T water
Direcciones
- Begin preparation at least 8 to 10 hrs before. Add in flour and water to sourdough starter in a non-plastic, covered container. Beat till smooth and let stand in a warm place, preferably overnight. When ready to prepare batter, remove 1 cup of starter, cover and chill for later use. To remaining batter add in and blend in sugar, salt, baking pwdr and oil. Beat in large eggs. Gently mix in dissolved soda. Don't stir after baking soda is added. Let batter rest while grids heat. Spread batter on lightly greased, very hot preheated waffle grids. Cook about 5 to 6 min. Repeat. Makes 4 to 6 servings.NOTE: Sourdough starter may be prepared by combining 2 cups unbleached flour, 2 cups lukewarm water, 1 tsp salt, 1 tbsp yeast and 3 tbsp sugar into a smooth paste. Store tightly covered in refrigerator till ready to use.
