Ingredientes
- 1/2 cup chopped leeks or green onions
- 1/2 red bell pepper, chopped
- 1/3 cup sliced almonds
- 4 cups water
- 6-8 tomatoes, chopped, or 1 can (14.5 oz) unsalted diced toms, undrained
- 2 T veg broth powder
- 1T sweet paprika
- 2 bay leaves
- 2 cups chopped kale
- 1 cup cooked brown rice
- 1 cup cooked or can garbanzo beans, drained and rinsed
Direcciones
- Put leeks, pepper, and almonds in a large soup pot over med high heat.
- Add 3-4 T water, 1T at a time, and cook, stirring frequently until water evaporates and onion is translucent.
- Stir in remaining water, toms, veg broth powder, paprika, and bay leaves and bring to boil. Stir in kale, rice, and beans.
- Decrease heat to med low and simmer 10 mins, or until heated.
- Remove bay leaves.
