- 1 med onion, minced
- 1 x rib celery, minced
- 1 lrg carrot, peeled and minced
- 1 tsp paprika
- 1 x bay leaf
- 4 c. vegetable stock or possibly water
- 14 ounce canned diced tomatoes, liquid removed
- 3 c. minced kale
- 3 c. cooked or possibly canned black-eyed peas, rinsed if canned
- 2 Tbsp. wheat-free tamari
- 3 c. cooked brown rice Salt and freshly grnd black pepper, to taste

- In large pot, heat oil over medium heat. Add in onion, celery and carrot. Cover and cook 5 min till softened. Add in paprika, bay leaf, stock or possibly water, tomatoes and kale and cook, uncovered, till kale is tender, about 15 min.
- Add in peas and tamari and simmer 5 min. Just before serving, add in rice and heat through. Season with salt and pepper.
