Receta Karen’s Lemon Blueberry Pound Cake
Very moist easy loaf cake.
Great for gifts and even a breakfast brunch item.
Everyone wants more.
Ingredientes
- 1 can coconut Milk
- 3 eggs
- 1 lemon cake mix
- 3/4 to 1 cup blueberry’s
- ICING
- 2 cups powder Sugar
- 1t clear vanilla extract
- 2-4 T milk
- Pour over completely cooled cake
Direcciones
- Pre heat oven 350 degrees
- Mix with mixer coconut milk, eggs and cake mix
- Until smooth
- Put cake mixture in loaf pan
- Add blueberry’s tossed in flour to loaf pan
- DO NOT STIR
- I push a few below the batter and leave some on top.
- Usually they sink during cooking
- Bake 40 minutes depending on laid pan size. Check with a toothpick
- To make sure it’s done.
- Cool cake before icing.
