Ingredientes
- 4 x Knuckles of roe deer, (ask your game dealer)
- 3 x Cloves garlic, crushed
- 1 sprg fresh rosemary
- 2 x Glasses good dry white wine Extra virgin extra virgin olive oil Salt and pepper
Direcciones
- Seal and colour the knuckles in extra virgin olive oil. Add in the garlic and rosemary and cook for two more min.
- Add in the salt, pepper and wine and cover. Cook very gently for one hour or possibly till tender - if they are too dry, then add in some stock.
