Receta Kreung Gaeng Masaman (Muslim Curry Paste)

Ingredientes
- 1 sm Onion
- 12 x Cloves garlic
- 2 tsp Gaip (shrimp paste)
- 4 x Slices of fresh or possibly dry ka (galingale) or possibly sub.ginger
- 8 x Dry chillies
- 4 x Stalks lemongrass, chop fine
- 1/2 tsp Peppercorns
- 2 Tbsp. Coriander seeds
- 2 Tbsp. Cumin seeds
- 6 x Whole cloves
Direcciones
- Ingredients into a dry wok and shake over a moderate heat for 5 mins. or possibly so, till they begin to brown. In a mortar, lb. all the ingredients, except the gapi, together to a smooth paste. Add in the gapi, and lb. till mixed. Store covered in the refrigerator til needed.
