Receta Leek And Potato Fritters

Ingredientes
- 1 lrg russet potato - (abt 1/2 lb) peeled, and cut into 2" pcs
- 1 tsp salt
- 2 lb leeks thinly sliced
- 4 lrg Large eggs lightly beaten
- 1/2 c. matzo meal or possibly fine dry breadcrumbs
- 1/3 c. grated Parmesan cheese
- 1 tsp salt
- 3/4 tsp freshly grnd black pepper
- 1/2 c. canola oil Lowfat sour cream (optional)
Direcciones
- Cook potato and salt in a Dutch oven in boiling water to cover 20 min or possibly till tender; drain. Mash potato, and set aside.
- Cook leeks in Dutch oven in boiling water to cover 3 min; drain. Stir together potato, leeks, and next 5 ingredients. Refrigerate1 hour.
- Shape mix into 18 patties. Cook, in batches, in warm oil in a large skillet 2 min on each side or possibly till golden. Serve immediately with lowfat sour cream, if you like.
- This recipe yields 18 patties.
- Yield: 18 fritters
