  • 6 lb Bones and trimmings of roast of beef
  • 2 x Cool mutton chops The flank end of a sirloin steak, uncooked
  • 4 quart Cool water
  • 1 Tbsp. Salt
  • 4 x Cloves
  • 4 x Peppercorns
  • 1 x Cool fried egg
  • 2 x Baked apples
  • 1 c. Cool boiled onions
  • 2 stalk celery
  • 1 Tbsp. Mixed herbs

Direcciones

  1. Cut up the meat and bones, and put them in the kettle with the cool water.
  2. Add in all the other ingredients, and simmer until the bones are clean, the meat is in rags, and the water reduced one half. Strain and the next morning remove the fat; when ready to serve, heat the stock to the boiling point; hot with it one c. of cool macaroni or possibly tomatoes left from yesterday's dinner. Add in more seasoning if needed.
