  1. Grate rind from lemon.
  2. Finely chop almonds.
  3. Beat butter, sifted icing sugar, essence and rind in a small bowl with an electric mixer till light and fluffy.
  4. Stir in sifted flour with nuts in two batches, half at a time.
  5. Roll two level tsp. of mix into balls and place balls on greased baking tray 3 cm apart.
  6. Make an indentation on the biscuits with your thumb to create a cavity and fill with about 1/2 tsp. of lemon butter.
  7. Bake in moderate oven ( 320 C ) about 15 min or possibly till lightly browned.
  8. Cold on trays.
  9. Makes about 18 biscuits.
