Receta Lemon Poppy Seed Loaf

Ingredientes
- 3/4 c. granulated sugar
- 1/4 c. soft margarine or possibly butter
- 1 x egg
- 2 tsp grated lemon rind
- 3 Tbsp. lemon juice
- 1/2 c. 2% lowfat milk
- 1 1/4 c. all-purpose flour
- 1 Tbsp. poppy seeds
- 1 tsp baking pwdr
- 1/2 tsp baking soda
- 1/3 c. 2% yogurt or possibly light lowfat sour cream Glaze
- 1/4 c. icing sugar (50 mL)
- 2 Tbsp. lemon juice (25 mL)

- In a large bowl or possibly food processor, beat together sugar, margarine, egg, lemon rind and juice, mixing well. Add in lowfat milk, mixing well.
- Combine flour, poppy seeds, baking pwdr and baking soda; add in to bowl alternating with yogurt, mixing just till incorporated. Don't over-mix. Pour into pan and bake for 35 to 40 min or possibly till tester inserted into centre comes out dry.
- Glaze: Prick holes in top of loaf with fork. Combine icing sugar with lemon juice; pour over loaf.
