- Juice of 1 lemon
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup sour cream
- 2 large eggs
- 1 1/2 teaspoon pure vanilla extract
- 1 stick (8 tablespoons) unsalted butter, melted and cooled
- 2 tablespoons poppy seeds
- For the Icing:
- 1 cup confectioners' sugar, sifted
- 2-3 tablespoons fresh lemon juice

.%20it%20was%20glorious%20-%20i%20thought%20we%20had%20left%20winter%20behind.%3C/p%3E%3Cp%3Ei%20should%20know%20better%20-%20i%20have%20lived%20here%20my%20entire%20life.%20it%20was%20a%20tease%20-%20a%20cruel%20and%20awful%20tease%20that%20Minnesota%20weather%20plays%20on%20us%20every%20stinkin'%20year.%3C/p%3E%3Cp%3Ethis%20week%20-%20winter%20is%20back.%20it%20snowed%20last%20night.%20i%20woke%20up%20to%20snow.%20not%20fun!%3C/p%3E%3Cp%3Eso%20i%20have%20decide%20to%20try%20and%20%22will%22%20the%20warm%20weather%20back%20with%20some%20spring-like%20muffins.%3C/p%3E%3Cp%3Ei%20have%20been%20searching%20grocery%20stores%20for%20poppy%20seeds%20and%20have%20had%20zero%20luck,%20so%20i%20finally%20made%20it%20down%20to%20my%20favorite%20spice%20store%20and%20bought%20a%20huge%20bag%20of%20them.%20aren't%20they%20lovely!%3C/p%3E%3Cp%3Ethese%20muffins%20are%20spring%20in%20a%20muffin%20cup!%20i%20increased%20the%20amount%20of%20lemon%20zest%20and%20the%20intensity%20was%20perfect.%20the%20tiny%20little%20specks%20of%20blue%20from%20the%20poppy%20seeds%20and%20the%20vivid%20yellow%20flecks%20of%20lemon%20zest%20are%20too%20much%20to%20handle%20-%20so%20pretty.%20These%20lemon%20poppy%20seed%20muffins%20are%20incredibly%20moist%20and%20the%20lemon%20glaze%20is%20the%20right%20amount%20of%20sweetness%20to%20top%20them%20off.%3C/p%3E%3Cp%3Ein%20another%20attempt%20to%20%22will%22%20spring%20back%20i%20bought%20some%20daffodils%20this%20week.%3C/p%3E%3Cp%3E...%20spring%20...%20are%20you%20listening%20....%20please%20come%20back!%3C/p%3E%3Cp%3Elemon%20poppy%20seed%20muffins%20with%20lemon%20glaze%3C/p%3E%3Cp%3Eadapted%20from%20Dorie%20Greenspan%3C/p%3E%3Cp%3EMakes%2012%20Muffins%3C/p%3E%3Cp%3EFor%20the%20Muffins:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ECenter%20a%20rack%20in%20the%20oven%20and%20preheat%20the%20oven%20to%20400%20degrees%20F.%20Line%2012%20molds%20in%20a%20regular-size%20muffin%20pan%20with%20paper%20muffin%20cups.%20Place%20the%20muffin%20pan%20on%20a%20baking%20sheet.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20rub%20the%20sugar%20and%20lemon%20zest%20together%20with%20your%20fingertips%20until%20the%20sugar%20is%20moist%20and%20the%20fragrance%20of%20lemon%20strong.%3C/p%3E%3Cp%3EWhisk%20in%20the%20flour,%20baking%20powder,%20baking%20soda%20and%20salt.%20In%20a%20large%20glass%20measuring%20cup%20or%20another%20bowl,%20whisk%20the%20sour%20cream,%20eggs,%20vanilla,%20lemon%20juice%20and%20melted%20butter%20together%20until%20well%20blended.%20Pour%20the%20liquid%20ingredients%20over%20the%20dry%20ingredients%20and,%20with%20a%20rubber%20spatula,%20gently%20but%20quickly%20stir%20to%20blend.%20Don%C3%A2%E2%82%AC%E2%84%A2t%20worry%20about%20being%20thorough%20%C3%A2%E2%82%AC%E2%80%9C%20a%20few%20lumps%20are%20better%20than%20over-mixing%20the%20batter.%20Stir%20in%20the%20poppy%20seeds.%3C/p%3E%3Cp%3EDivide%20the%20batter%20evenly%20among%20the%20muffin%20cups.%3C/p%3E%3Cp%3EBake%20for%2018%20to%2020%20minutes,%20or%20until%20the%20tops%20are%20golden%20and%20a%20thin%20knife%20inserted%20into%20the%20center%20of%20the%20muffins%20comes%20out%20clean.%20Transfer%20the%20pan%20to%20a%20rack%20and%20cool%20for%205%20minutes%20before%20carefully%20removing%20each%20muffin%20from%20its%20mold.%20Cool%20the%20muffins%20completely%20on%20the%20rack%20before%20icing%20them.%3C/p%3E%3Cp%3ETo%20make%20the%20icing:%3C/p%3E%3Cp%3EPut%20the%20confectioners'%20sugar%20in%20a%20small%20bowl%20and%20add%20about%201%201/2%20tablespoons%20of%20the%20lemon%20juice.%20%20Stir%20with%20a%20spoon%20to%20moisten%20the%20sugar,%20then%20add%20enough%20lemon%20juice,%20a%20dribble%20at%20a%20time,%20to%20get%20an%20icing%20that%20is%20thin%20enough%20to%20drizzle%20from%20the%20tip%20of%20the%20spoon.%20Then%20drizzle%20lines%20of%20icing%20over%20the%20tops%20of%20the%20muffins%20or%20coat%20the%20tops%20entirely.%3C/p%3E%3Cp%3Eother%20recipes%20attempting%20to%20%22will%22%20spring%20to%20come....%3C/p%3E%3Cp%3Egrapefruit%20avocado%20and%20kumquat%20salad%3C/p%3E%3Cp%3Epasta%20and%20vegetables%20with%20warm%20lemon%20vinaigrette%3C/p%3E%3Cp%3Elemon%20brioche%20rolls%3C/p%3E%3Cp%3EIf%20you%20enjoyed%20this%20recipe,%20please%20consider%20leaving%20a%20comment%20and/or%20subscribing%20to%20the%20feed%20to%20have%20future%20recipes%20delivered%20to%20your%20feed%20reader.%3C/p%3E){kind=link}
