Ingredientes
- 1 cup all-purpose flour
- 2 T sugar
- 1/2 t salt
- 1/4 t finely grated lemon zest*
- 1 stick cold butter, cut into pieces
- 1 T water
- 1/2 t lemon extract
- For the Lemon Curd~
- 2 large eggs plus 3 large egg yolks
- (Save the egg whites to make meringue cookies)
- 1/4 cup plus 2 T sugar
- 1/4 t cornstarch
- 3 T finely grated lemon zest*
- 1/3 cup fresh lemon juice*
- 6 T unsalted butter, cut into small pieces.
- Meringue Cookies~
- 4 egg whites, at room temperature
- 1/2 t cream of tartar
- pinch of salt
- 1 cup sugar
- 1 t vanilla extract
- a few drops of yellow food coloring, if desired

%20~%20Have%20a%20Very%20Happy%20Birthday%20Cindy~%3C/p%3E%3Cp%3EToday%20for%20Cindy's%20Birthday%20I%20thought%20I%20would%20make%20her%20a%20Lemon%20Tart%20and%20this%20year%20I%20have%20challenged%20myself%20to%20make%2012%20Recipes%20in%202014.%20Recipes%20I%20have%20never%20made%20before,%20but%20have%20always%20wanted%20too.%20I%20bought%202%20tart%20pans,%20some%20time%20ago.%20I%20have%20yet%20to%20use%20either%20pan%20even%20though%20I'm%20pretty%20sure%20I%20bought%20them%205+%20years%20ago!%20One%20tart%20pan%20has/had%20a%20removable%20bottom%20and%20the%20other%20one%20did%20not.%20When%20I%20decided%20to%20make%20this%20tart,%20and%20to%20finally%20use%20the%20tart%20pans,%20I%20couldn't%20find%20the%20removable%20bottom%20to%20the%20pan%20that%20I%20wanted%20to%20use.%20I%20looked%20every%20where%20I%20could%20think%20of%20and%20I%20couldn't%20find%20the%20removable%20bottom.%20Let%20this%20be%20a%20lesson%20to%20me........if%20you%20don't%20use%20it%20within%20a%20year,%20lose%20it!!%20I%20used%20the%20non-removable%20bottom%20tart%20pan%20and%20crossed%20my%20fingers.....I%20hope%20I%20can%20get%20the%20tart%20out%20of%20the%20tart%20pan!%3C/p%3E%3Cp%3EKitchen%20Tip~%3C/p%3E%3Cp%3EI%20made%20this%20Lemon%20Tart%20using%20Meyer%20Lemons.%20I%20love%20Meyer%20Lemons!!%20I%20try%20to%20use%20Meyer%20Lemons%20when%20ever%20possible%20because%20I%20love%20the%20flavor%20and%20sweetness.%20This%20time%20of%20year%20I%20can%20find%20Meyer%20Lemons%20in%20most%20grocery%20stores,%20but%20here%20in%20Northern%20WI,%20Meyer%20lemons%20aren't%20always%20available.%20That's%20why%20when%20I%20see%20Meyer%20lemons%20in%20the%20grocery%20store,%20I%20buy%20a%20couple%20of%20bags%20and%20I%20juice%20and%20zest%20them.%20I%20freeze%20the%20lemon%20zest%20in%20a%20baggie%20and%20pour%20the%20juice%20into%20ice%20cube%20trays.%20I%20freeze%20the%20juice%20in%20the%20trays%20until%20frozen%20and%20I%20put%20the%20cubes%20in%20baggies.%20Whenever%20I%20want%20to%20add%20the%20freshness%20of%20lemons%20to%20my%20recipes%20or%20when%20a%20recipe%20calls%20for%20fresh%20squeezed%20lemon%20juice%20or%20zest,%20I%20add%20a%20cube%20or%20two%20of%20frozen%20juice%20or%20a%20teaspoon%20or%20tablespoon%20of%20zest:)%20I%20also%20use%20this%20same%20method%20with%20oranges,%20limes,%20tangerines%20and%20grapefruit.%3C/p%3E%3Cp%3EI%20decided%20to%20top%20the%20Lemon%20Tart%20with%20Yellow%20Meringue%20Cookies%20instead%20of%20Whipped%20Cream.%20I%20love%20these%20Light%20and%20Airy%20Cookies~%20Delicious%20and%20Low-Fat%20they%20always%20add%20a%20festive%20and%20whimsical%20touch.%20Another%20thing%20I%20like%20about%20these%20cute%20cookies%20is,%20you%20can%20make%20them%20any%20color%20you%20like.%20I%20think%20a%20platter%20of%20pastel%20colored%20meringue%20cookies%20looks%20festive%20on%20a%20Spring%20Luncheon%20table%20or%20on%20your%20Easter%20Dinner%20table:)%20Purple,%20pink,%20lime%20green,%20blue,%20or%20yellow,%20add%20color%20with%20food%20coloring%20and/or%20add%20color%20and%20flavor%20using%20dry%20jello%20powder.%3C/p%3E%3Cp%3ELemon%20Tart%20with%20Meringue%20Cookies~%3C/p%3E%3Cp%3EFor%20the%20Crust~%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375.%3C/p%3E%3Cp%3EMake%20the%20crust:%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20sugar,%201/2%20t%20salt%20and%20lemon%20zest%20in%20a%20large%20bowl.%20Cut%20in%20butter%20with%20a%20pastry%20cutter%20or%20use%20your%20fingers%20until%20dough%20starts%20to%20hold%20together.%3C/p%3E%3Cp%3EStir%20together%201%20T%20water%20and%20lemon%20extract.%20Mix%20into%20dough.%20Shape%20dough%20into%20a%20disk%20and%20wrap%20in%20plastic%20wrap%20and%20refrigerate%20for%2030%20minutes.%3C/p%3E%3Cp%3EUsing%20your%20fingers,%20press%20dough%20evenly%20into%20bottom%20and%20up%20sides%20of%20a%209-inch%20fluted%20tart%20pan%20with%20a%20removable%20bottom.%20Refrigerate%20for%2030%20minutes.%3C/p%3E%3Cp%3EBake%20tart%20shell%20until%20golden%20brown,%20about%2025%20minutes.%20Let%20cool%20completely.%3C/p%3E%3Cp%3EMeanwhile,%20make%20the%20lemon%20curd:%3C/p%3E%3Cp%3EWhisk%20together%20eggs,%20egg%20yolks,%20sugar%20and%20cornstarch%20in%20a%20medium%20saucepan.%20Whisk%20in%20lemon%20zest%20and%20juice.%20Cook%20over%20medium%20low%20heat,%20stirring%20constantly,%20until%20thick%20enough%20to%20coat%20the%20back%20of%20a%20wooden%20spoon,%20about%207%20minutes.%20Remove%20from%20heat%20and%20whisk%20in%20butter,%20one%20piece%20at%20a%20time.%3C/p%3E%3Cp%3EPour%20filling%20into%20cooled%20tart%20shell.%20Bake%20until%20filling%20is%20browned,%20slightly%20puffed%20and%20set,%20about%2030%20minutes.%20Let%20cool%20completely.%3C/p%3E%3Cp%3EMake%20Meringue%20Cookies:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20225.%3C/p%3E%3Cp%3E2.%20Beat%20egg%20whites%20in%20large%20bowl%20with%20electric%20mixer%20on%20medium%20speed%20until%20frothy.%20Add%20cream%20of%20tartar%20and%20a%20pinch%20of%20salt.%20Beat%20until%20soft%20peaks%20form.%20Increase%20speed%20
