  • 1½ cups all purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup plain yogurt, (I used Chobani)
  • ¾ cup sugar
  • 3 eggs
  • zest from 1 lemon
  • ½ teaspoon pure vanilla extract
  • ½ teaspoon Lemon emulsion (optional)
  • ½ cup vegetable oil
  • ⅓ cup freshly squeezed lemon juice + ⅛ cup sugar
