Receta Lemongrass Pork Soup
I loved this soup. It really was good for a cold.
Ingredientes
- 2 Stalks Lemongrass, thinly sliced
- 5 garlic cloves, coarsely chopped
- 2 Tbl peeled, coarsely chopped galangal
- 1 lrg Shallot, coarsely chopped
- 1 Tbl chopped fresh cilantro
- 4 kaffir limes leaves, deveined
- 2/3 C water
- 2.5lbs spareribs cut into 1 1/2 inch pieces across the bone, then cut between the bone
- 5 C water
- 3Tbl fish sauce
- 1 1/2 Tbl salt
- 12 Tbl sugar
- 1 C tamarind juice (a hunk of tamarind melted in boiling water)
- 1lb Chinese watercress
Direcciones
- To make a paste: Blend all the ingredients for paste in a blender until smooth, 2 to 3 minutes.
- Transfer the paste to a large pt, sir in the ribs and cook over medium high heat, stirring well, for 5 to 6 minutes. Add the water, fish sauce, salt and sugar and bring to a boil over high heat. When the soup has reached a boil, skim, reduce heat and simmer, partially covered, until the ribs are tender, about 1 1/4 hours.
- Stir in tamarind juice with the watercress remove from heat and serve in bowls.
