%20to%20share%20with%20his%20co-workers%20in%20our%20shipping%20department.%20%20It%20was%20his%20birthday%20the%20week%20before%20so%20I%20thought%20I%20would%20be%20nice%20since%20I%20harass%20him%20every%20day%20when%20he%20comes%20in%20the%20office.%20%20I%20was%20lazy%20though.%20%20I%20used%20a%20golden%20yellow%20cake%20mix.%20%20However,%20I%20would%20not%20allow%20myself%20to%20be%20lazy%20on%20the%20frosting,%20so%20I%20made%20a%20homemade%20caramel%20fudge%20frosting%20to%20top%20it%20off.%20%20Not%20beautiful%20by%20any%20means,%20but%20the%20frosting%20is%20a%20yummy%20frosting%20that%20makes%20you%20feel%20like%20you%20are%20eating%20candy.%20%20Hmm,%20I%20wonder%20if%20anyone%20thought%20I%20put%20Halloween%20wrappers%20on%20those%20cupcakes%20to%20be%20a%20smarty%20pants?%20%20lol.%20%20Ya%20know,%20as%20in%20scary%20thought%20that%20my%20friend%20is%20getting%20old.%20%20he%20he%3C/p%3E%3Cp%3ESo%20many%20changes%20are%20happening%20in%20our%20home%20and%20I%20am%20feeding%20only%20myself%20for%20the%20most%20part.%20%20I%20also%20decided%20to%20make%20a%20conscious%20effort%20to%20eat%20vegan.%20%20While%20I%20will%20not%20punish%20myself%20if%20I%20end%20up%20with%20a%20food%20that%20had%20some%20dairy%20in%20it%20(like%20salad%20dressing)%20I%20am%20doing%20my%20best%20to%20just%20leave%20all%20meat%20and%20dairy%20products%20alone.%20%20What%20a%20difference%20it%20made%20in%20my%20weight%20loss%20this%20week!%20%20You%20%20can%20check%20my%20other%20blog%20to%20keep%20up%20with%20my%20diet.%20%20I'll%20have%20a%20post%20up%20by%20tomorrow%20at%20the%20latest!%3C/p%3E%3Cp%3ESo%20what%20have%20I%20been%20eating?%20%20I%20made%20some%20baked%20seitan%20and%20made%20a%20seitan%20tofu%20scramble%20from%20Vegan%20Yum%20Yum.%20%20I%20also%20made%20the%20Red%20and%20White%20Cauliflower%20Bake.%20%20The%20cauliflower%20dish%20is%20a%20definite%20winner%20as%20%20Grumpy's%20first%20bite%20was%20%22this%20is%20very%20edible%22%20and%20then%20proceeded%20to%20eat%20seconds!%20%20The%20tofu%20scramble%20idea%20I%20like%20but%20it%20was%20too%20salty%20for%20me.%20%20I'm%20thinking%20I%20would%20use%20my%20own%20scrambled%20tofu%20recipe%20and%20add%20the%20beans,%20veggies,%20seitan%20to%20that%20instead%20when%20I%20make%20this%20again%20because%20I%20will%20make%20it%20-%20just%20my%20way!%3C/p%3E%3Cp%3ESo%20does%20the%20fact%20I%20am%20eating%20vegan%20mean%20this%20is%20going%20to%20become%20a%20vegan%20blog?%20%20Not%20in%20any%20way.%20%20My%20choice%20for%20vegan%20eating%20is%20health%20related.%20%20It%20is%20my%20choice%20and%20of%20course%20I'm%20sure%20you%20all%20know%20its%20not%20Grumpy's%20choice!%20%20While%20he%20has%20been%20a%20good%20camper%20lately%20and%20will%20try%20the%20dishes%20I%20make%20for%20the%20most%20part,%20he%20is%20a%20die%20hard%20meat%20and%20potatoes%20man.%20%20It%20will%20be%20challenging%20for%20me%20(when%20he's%20around)%20to%20cook%20for%20both%20of%20us.%20%20We%20will%20see%20how%20it%20goes!%20%20My%20mind%20is%20very%20set%20on%20how%20I%20want%20to%20eat%20and%20I'm%20not%20too%20willing%20to%20change%20it.%20%20So,%20you%20will%20continue%20to%20see%20what%20I%20fix%20for%20Grumpy%20and%20now%20for%20me.%20%20If%20I'm%20lucky,%20Grumpy%20will%20like%20more%20of%20my%20food%20as%20the%20days%20go%20by!%3C/p%3E%3Cp%3EI%20also%20have%20been%20very%20unmotivated%20to%20blog%20much%20because%20I%20have%20nothing%20of%20my%20own%20that%20is%20exciting%20to%20blog%20about%20-%20unless%20you%20think%20instant%20oatmeal%20with%20peaches%20is%20interesting%20to%20you%20I'll%20refrain%20from%20posting.%20%20:)%20%20I%20hope%20to%20be%20back%20in%20a%20few%20days%20with%20Grumpy's%20favorite%20Chocolate%20Zucchini%20Bread%20recipe.%20%20Maybe%20I'll%20experiment%20with%20some%20vegan%20cupcakes%20later%20in%20the%20week.%20%20We%20will%20see%20how%20the%20week%20goes%20for%20me!%20%20For%20now%20though,%20I%20will%20leave%20you%20with%20the%20yummy,%20caramely%20fudge%20frosting%20I%20made%20for%20Scott's%20cupcakes.%3C/p%3E%3Cp%3EPlace%20the%20butter%20and%20brown%20sugars%20in%20a%20heavy%20medium-size%20saucepan%20over%20medium%20heat.%20Cook,%20stirring,%20until%20the%20mixture%20comes%20to%20a%20boil,%20about%202%20minutes.%20Add%20the%20milk,%20stir,%20and%20let%20the%20mixture%20return%20to%20a%20boil,%20then%20remove%20the%20pan%20from%20the%20heat.%20Add%20the%20vanilla%20and%20confectioners%E2%80%99%20sugar%201/2%20cup%20at%20a%20time.%20Beat%20with%20a%20whisk%20until%20the%20frosting%20is%20smooth.%20Add%20%20the%20last%201/2%20cup%20of%20confectioners%E2%80%99%20sugar,%20but%20not%20so%20much%20so%20that%20it%20thickens%20and%20hardens.%20Spoon%20a%20heaping%20tablespoon%20of%20frosting%20on%20top%20of%20each%20cupcake%20and%20spread%20it%20out%20with%20a%20short%20metal%20spatula%20or%20spoon,%20taking%20care%20to%20cover%20the%20top%20completely.%3C/p%3E){kind=link}
