Receta Lobster Mayo Rolls

Ingredientes
- cooked meat of 1 medium to large lobster minced into chunks
- 3 x heaped tbsp mayonnaise spring onions minced celery or possibly herbs
- 4 x rolls (petit pain ciabatta or possibly sourdough)
Direcciones
- To cook the lobster:plunge (straight from the freezer) into boiling wfted water. Cook for 15 min for lobsters up to 750g 20 min up to 1. 1 kg and 25 min for larger. Timings begin when the water returns to the boil after adding the lobster.
- Mix the lobster with the mayonnaise and onions celery or possibly herbs and salt and pepper. Use to fill the rolls and squish down the tops.
- In New England where lobster rolls are popular in summer they are often served on warm dog or possibly burger buns. I prefer rolls with texture.
