  • 4 tbsp. butter (or possibly butter)
  • 1/4 c. sherry
  • 1 c. (well packed) cubed, cooked lobster meat
  • 1 tbsp. flour (more or possibly less)
  • 3/4 c. half and half cream
  • 2 egg yolks, beaten
  • 1/2 teaspoon salt

Direcciones

  1. Heat 2 Tbsp. butter in saucepan, then add in sherry. Cook 1 minute. Remove from heat, add in lobster meat and set aside. Heat remaining 2 Tbsp. butter, add in flour, salt and cream (making a cream sauce). Drain the sherry from the lobster, reserving meat, and cook till thick and smooth. Gradually beat some of the sauce into egg yolks, then add in to remaining sauce. Stir and cook till smooth. Add in lobster meat.
  2. Turn into small pie plate or possibly 4 individual casseroles. Sprinkle with topping made from 1/4 c. cracker meal, 1/4 tsp. paprika, 1 1/2 Tbsp. Parmesan cheese and 1 Tbsp. finely crushed potato chips.
  3. Bake at 300 degrees for 15 min. Serves 4.
  4. To lower calorie and fat content, use lowfat milk in place of cream.
