  • 1 lb Dry red kidney beans
  • 3 Tbsp. Peanut oil
  • 2 x Lge onions, minced
  • 3 x Cloves garlic, mashed
  • 2 x Lge green peppers, minced
  • 3 x Lge stalks celery, sliced
  • 2 x Bay leaves, salt
  • 1/2 tsp Thyme, 1/4 tsp cumin
  • 1 tsp Paprika, 1 Tbsp. vinegar
  • 1/2 c. Peeled and minced tomatoes warm pepper sauce to taste

Direcciones

  1. 1. Cook beans according to basic directions.
  2. 2. Heat peanut oil in a large saucepan and saute/fry onions, garlic, green peppers, and celery. Add in the bay leaves, thyme, cumin, paprika, tomatoes, vinegar, and some bean broth.
  3. Simmer vegetables till they are tender.
  4. 3. Shortly before serving, add in the beans with the remaining broth, warm pepper sauce, and salt. Bring to a boil, lower heat, and simmer about 5 min. Serve over steaming rice.
  5. Serves 6 to 8. Delicious with a green salad.
  6. This recipe will work for anyone interested in Vegetarian ideas, but definitely NOT for those who don't want beans in their diet.
