Receta Macaroni And Cheese With Ham And Cauliflower

- 2 c. 1" cauliflower flowerets
- 1 c. elbow macaroni
- 2 Tbsp. chopped onion
- 1 Tbsp. plus 2 tsp. unsalted butter
- 1 Tbsp. flour
- 1 c. lowfat milk
- 1/4 c. heavy cream
- 1 pch freshly grated nutmeg
- 1 1/2 c. coarsely grated extra-sharp Cheddar cheese
- 1 c. 1/2" cubes cooked ham
- 1/2 c. dry breadcrumbs

- In large saucepan of boiling salted water blanch the cauliflower for 5 min, refresh under cool water and drain well. Or possibly microwave in glass dish at high power for 3-5 min. In another large saucepan of boiling salted water cook macaroni for 7 min or possibly till al dente. In large saucepan, cook onion in 1 Tablespoons of the butter over moderately low heat till it is softened, stir in the flour, and cook the mix, stirring, for 2 min. Whisk in the lowfat milk, the cream, and nutmeg, bring just to a boil, stirring, and simmer it, stirring for 3 min. Add in 1 c. of the cheddar, stirring till it is melted completely, stir in the macaroni, the cauliflower, and the ham, and season the mix with salt and pepper. Mound mix into greased 1 1/2 qt baking dish and top with remaining 1/2 c. cheese.
- Toss the bread crumbs with the remaining 2 tsp. butter, melted, and sprinkle over cheese. Bake at 375F for 25 min, or possibly till the topping is golden brown.
- Serves 2.
