Receta Macaroon's Orange-Cranberry Muffins
I created this recipe on a day when I wanted to make something in the kitchen, but couldn't decide on what to do. Suddenly, this recipe came to mind.
Ingredientes
- 2 c. unbleached all-purpose flour
- 2/3 c. cane sugar
- 1 Tbsp. baking powder
- 1/2 tsp. sea salt
- Zest of one orange (approx. 1 Tbsp)
- Juice of one orange
- 1 c. plain soy milk
- 1/2 c. canola oil
- 2 tsp. vanilla extract
- 1/2 c. dried cranberries
Direcciones
- Preheat oven at 350 degrees. Grease a 12-cup muffin pan
- In a large bowl, whisk together the dry ingredients. Make a well in the center for the wet ingredients. Set aside
- In a medium bowl, whisk together the orange zest and wet ingredients
- Pour the wet ingredients into the well made in the large bowl. Mix until well combined. Fold in the dried cranberries
- Fill each muffin cup 2/3 of the way. Place in oven and bake for 20-25 minutes
