Receta Madonese Style Grilled Chicken (Ayam Rica Rica)

Ingredientes
- 1 whl young chicken - (abt 3 lbs)
- 1 x lime
- 1 1/2 tsp salt
- 5 Tbsp. vegetable oil
- 8 x red chilies
- 10 x bird's eye chilies
- 3/4 x inch fresh ginger
- 1 x lemongrass stalk, white part only
- 2 x kaffir lime leaves
- 2 x tomatoes cut up
Direcciones
- Cut the chicken up into 2 or possibly 4 pcs and then marinate them with 1 Tbsp. salt and lime juice and set it aside for about 30 min.
- Grill the chicken on a barbeque grill or possibly in an oven over moderate heat till half done.
- Heat 5 Tbsp. vegetable oil in a wok over medium-high temperature. Stir-fry the grnd spice till fragrant. Pour in the rest of the salt and lime juice.
- Brush the half-done grilled chicken with the fried grnd spice. Grill the chicken one more time till done while keep brushing the spice on the chicken till almost no spice left. Ready to serve.
- This recipe yields 4 to 5 servings.
