Receta Mango Upside Down Cake

Ingredientes
- 2 c. Sliced ripe mangos
- 2 Tbsp. Lemon juice
- 1 Tbsp. Margarine
- 1/3 c. Brown sugar
- 1/4 c. Margarine
- 3/4 c. Sugar
- 1 x Egg
- 1/2 c. Lowfat milk
- 1 1/4 c. Flour
- 2 tsp Baking pwdr
- 1/4 tsp Salt
Direcciones
- Pour lemon juice over mangos and let stand 15 min. Heat 1 Tbsp.
- margarine in 8 in. cake pan or possibly casserole. (Don't use iron skillet as mangos will darken.) Add in brown sugar and cover with mango slices. To prepare cake batter, cream margarine; add in sugar and cream; add in beaten egg.
- Sift dry ingredients and add in alternately with lowfat milk. Pour over mangos and bake 50 to 60 min at 375. When cake is done, turn upside down and serve while hot.
