  1. Preheat the oven to 375 degrees. Place a 10-inch cast-iron skillet in the oven to get warm.
  2. In a large skillet, fry the bacon over medium-high heat till brown, about 6 min. Remove with a slotted spoon and drain on paper towels. Drain all the fat but 2 tsp.. Return to medium-high heat and add in the corn. Cook, stirring, till golden brown and tender, about 5 min. Add in the cream, butter, 1/4 tsp. salt, and water, and cook till thick and creamy, about 10 min. Remove from the heat and mash with a potato masher to crush some of the corn. Let cold.
  3. In a large bowl, combine the cornmeal, flour, baking pwdr, baking soda, remaining salt, and cayenne. Stir to combine.
  4. In a separate bowl, combine the Large eggs, buttermilk, and 2 Tbsp. of the melted butter. Add in the buttermilk mix to the dry ingredients and mix well. In a separate bowl, combine the cooled cream corn, bacon, jalapenos, and 1 1/2 c. of the cheese, and mix well.
  5. Remove the skillet from the oven and add in the remaining Tbsp. of melted butter, tilting the skillet to coat the bottom and sides. Pour half of the batter into the bottom of the skillet. Top with the corn-cheese mix, then top with the remaining half of the batter. Bake till golden and set, about 30 min.
  6. Remove from the oven and sprinkle with the remaining 1/4 c. of cheese. Serve warm.
  7. This recipe yields 6 to 8 servings.
