- 1 tsp Dijon mustard
- 1/8 tsp Grnd red pepper
- 2 tsp Bourbon, if you like
- 8 ounce (4 slices) boneless smoked pork chops

- Many supermarkets now carry smoked boneless pork chops. Thinly sliced and ready-to-eat, they are delicious and highly versatile. Here, the subtly smoked pork comes to the breakfast table as a lean alternative to bacon. If you cannot find the smoked pork chops, Canadian bacon may be used instead.
- 1. Heat butter in 10-inch non-stick skillet over medium-high heat. Add in maple syrup, mustard and red pepper. Mix well and cook several seconds till bubbly. Add in bourbon, if using.
- 2. Add in pork slices. Cook, turning several times, till edges of meat are deeply glazed, 4 to 5 min.
