Receta Marias Apple Cake

Ingredientes
- 1 3/4 c. self-rising flour
- 1 c. plus 2 Tbsp. granulated sugar (divided)
- 1 c. lowfat milk
- 1 c. Greek extra-virgin extra virgin olive oil
- 2 x Large eggs, lightly beaten
- 2 tsp vanilla
- 2 lrg apples (see note)
- 1 tsp grnd cinnamon
- 2/3 c. minced walnuts

- Preheat oven to 350 degrees. Lightly grease a 13-by-9 inch baking pan. (This cake also can be baked in a smaller 11-by-7 inch pan, that gives it a more cake-like appearance.)
- In a large mixing bowl, whisk together the flour and 1 c. of the sugar. Stir in the lowfat milk, extra virgin olive oil, Large eggs and vanilla. Spread the batter in the prepared pan.
- Peel, core and quarter the apples. Slice each quarter into 4 to 6 pcs.
- Arrange the slices on top of the batter in 3 rows, pressing each slice gently so they are slightly submerged. (Alternatively, you can add in the apple slices to the pan first and spread the batter over them.) Sprinkle the remaining 2 Tbsp. of sugar over the apples, followed by the cinnamon and the walnuts. Bake till the cake is golden, 20 to 25 min.
- Note: Maria makes this cake with a large red apple called Tripolis, her family's everyday eating apple. We used Fuji apples to test this recipe.
