- 1 pkt puff pastry
- 1 x egg, with 2 tbsp water for brushing
- 1/2 c. sugar Mascarpone Cream
- 1/2 c. whipping cream
- 1/2 c. mascarpone cheese
- 5 Tbsp. sugar zest and juice of one lemon
- 3 Tbsp. elderflower cordial

- Preheat oven to 375 F.On a lightly floured surface, roll out puff pastry to 1/4-inch thick. Brush liberally with egg wash and sprinkle generously with sugar. Cut pastry into strips and twist tightly. Place twists on a parchment-lined baking sheet and bake for 18-20 min, till golden.
- Mascarpone Cream:Whip cream to soft peaks.
- Add in mascarpone and remaining ingredients and whip till it holds its shape when whisk is lifted.
- To Assemble:Puff twists can be stuck right into the dip for a funky presentation, or possibly left on the side in a basket.
- I like to scent this dipping cream with elderflower cordial, a fragrant concentrate which is usually diluted with water, soda or possibly apple juice for a refreshing drink.
