Receta Matzo Burrito Casserole

- I thought I would post what I ate for lunch yesterday and today...it tasted great. Now, I'm definately not claiming this to be a typical passover dish, but I usually eat burritos for lunch, so since I cannot eat tortillas right now I came up with the following alternative. Happy Pesach!
- (sorry, I didn't measure anything) Preheat oven to 350. In a square casserole dish, spread some salsa on the bottom of the pan to keep the matzo from sticking. Spread FF refried beans on top of sufficient matzos to cover (one layer) the bottom of the dish. I then put a layer of red and green bell peppers and then another layer of matzo with refried beans. On top of which I put a layer of green chilies, another matzo, and some salsa and tofu on top. Bake in oven for about 15 min. The matzos soften up like tortillas, and this saves very well.
- I think which pretty much any combo of beans, veggies, salsas, yogurt, lowfat sour cream, mock guac...whatever would taste good like this. Even making regular lasagna with matzo instead of pasta would taste great!
- A quick Passover warning, I looked at the ingredients on my FF parmesan cheese, and it has wheat flour in it!
- Oh, another idea with matzo is to dampen it and the put cream cheese and veggies and roll it like a lavosh sandwich. I was originally going to do the burrito this way, but decided the casserole would be quicker, and I think it was probably a lot yummier than it would have been as a regular burrito.
