  • 1 lb pork sausage -- mild
  • 1 lb pork sausage -- spicy
  • 1 med onion -- minced
  • 6 c. crispy rice cereal
  • 1 1/2 c. cooked long-grain white rice
  • 2 c. shredded cheddar cheese
  • 6 med Large eggs
  • 21 1/2 ounce condensed cream of celery soup - reduced-sodium (2 cans)
  • 1/2 c. lowfat milk
  • 1 Tbsp. butter -- softened

Direcciones

  1. Grease a 3-qt rectangular baking dish; set aside. In a very large skillet, cook sausage and onion till sausage is no longer pink and onion is tender.
  2. Drain off fat. Set aside.
  3. Meanwhile, in a large bowl, combine 5 c. of the cereal and the cooked rice.
  4. Spread rice mix proportionately in bottom of prepared baking dish. Spoon sausage mix over rice layer. Sprinkle with cheddar cheese.
  5. In a medium bowl, beat Large eggs, soup, and lowfat milk with a wire whisk till combined.
  6. Carefully pour over layers in baking dish. Press down lightly with back of a spoon. Toss remaining 1 c. cereal with butter. Sprinkle over top. Bake in a 325 degree F. oven 50 to 55 min or possibly till golden and bubbly. Let stand 10 min before serving.
  7. Yield: 12 servings.
