%20plate%20of%20cookies%20and%20a%20mug%20of%20hot%20chocolate.%3C/p%3E%3Cp%3EBecause%20I%20value%20my%20life%20this%20is%20not%20often%20my%20breakfast....%3C/p%3E%3Cp%3EI%20do%20it%20once%20a%20year:%20Christmas%20morning.%3C/p%3E%3Cp%3EAnd%20then%20I%20skip%20the%20hot%20chocolate%20and%20just%20have%20no-cal%20coffee...%20so%20I%20can%20eat%20more%20cookies.%3C/p%3E%3Cp%3EI%20must%20also%20confess%20that%20this%20is%20the%20only%20time%20of%20year%20when%20I%20am%20intentionally%20wasteful%20of%20food.%3C/p%3E%3Cp%3EI%20will%20bake%20Christmas%20cookies%20on%20the%2023rd.%3C/p%3E%3Cp%3EOther%20than%20my%20Christmas%20breakfast,%20we%20will%20be%20responsible%20cook%20eaters%20until%20the%2029th%20of%20December...%20At%20which%20time%20all%20remaining%20cookies%20will%20go%20in%20the%20trash.%3C/p%3E%3Cp%3EDon't%20bother%20giving%20me%20alternatives.%20%20This%20works.%3C/p%3E%3Cp%3EI%20know:%20it's%20wasteful%20and%20I%20feel%20guilty.%3C/p%3E%3Cp%3EI%20live%20with%20it.%3C/p%3E%3Cp%3EEver%20wondered%20where%20cookies%20come%20from?%3C/p%3E%3Cp%3EI%20did.%20%20I'll%20share....%20This%20came%20from%20the%20History%20of%20Cookies.%3C/p%3E%3Cp%3EIn%20America,%20a%20cookie%20is%20described%20as%20a%20thin,%20sweet,%20usually%20small%20cake.%20By%20definition,%20a%20cookie%20can%20be%20any%20of%20a%20variety%20of%20hand-held,%20flour-based%20sweet%20cakes,%20either%20crisp%20or%20soft.%20Each%20country%20has%20its%20own%20word%20for%20%22cookie.%22%20What%20we%20know%20as%20cookies%20are%20called%20biscuits%20in%20England%20and%20Australia,%20in%20Spain%20they're%20galletas,%20Germans%20call%20them%20keks%20or%20Pl%C3%A4tzchen%20for%20Christmas%20cookies,%20and%20in%20Italy%20there%20are%20several%20names%20to%20identify%20various%20forms%20of%20cookies%20including%20%20amaretti%20and%20biscotti,%20and%20so%20on.%20The%20name%20cookie%20is%20derived%20from%20the%20Dutch%20word%20koekje,%20meaning%20%22small%20or%20little%20cake.%22%20Biscuit%20comes%20from%20the%20Latin%20word%20bis%20coctum,%20which%20means,%20%E2%80%9Ctwice%20baked.%E2%80%9D%20According%20to%20culinary%20historians,%20the%20first%20historic%20record%20of%20cookies%20was%20their%20use%20as%20test%20cakes.%20A%20small%20amount%20of%20cake%20batter%20was%20baked%20to%20test%20the%20oven%20temperature.%3C/p%3E%3Cp%3EThe%20earliest%20record%20of%20a%20cookie%20or%20small,%20sweet%20cake,%20dates%20from%207th%20century%20Persia.%3C/p%3E%3Cp%3EBy%20the%20end%20of%20the%2014th%20century%20you%20could%20buy%20cookies%20on%20the%20streets%20in%20Paris.%3C/p%3E%3Cp%3EBy%20the%2016th%20century%20there%20were%20cook%20books%20(well,%20one)%20complete%20with%20cookie%20recipes.%3C/p%3E%3Cp%3EBy%20the%2018th%20century%20the%20cookie%20reached%20the%20U.S.%20and%20exploded%20(much%20like%20cakes%20and%20pies).%3C/p%3E%3Cp%3EI%20think%20it's%20fascinating%20what%20Americans%20have%20done%20with%20a%20simple%20concept.%3C/p%3E%3Cp%3EMaybe%20it's%20that%20Europeans%20are%20more%20steeped%20in%20time-honored%20traditions.%3C/p%3E%3Cp%3EThere%20are%20wonderful%20pies%20or%20tarts%20in%20France%20-%20but%20not%20pumpkin,%20pecan,%20butterscotch,%20chocolate,%20banana%20cream,%20key%20lime,%20coconut,%20sour%20cream%20raisin,%20shoo-fly,%20or,%20my%20personal%20favorite,%20cranberry%20cheesecake%20pie.%3C/p%3E%3Cp%3EThere%20are%20wonderful%20cakes%20in%20England%20-%20but%20not%20angel%20food,%20red%20velvet,%20maple%20spice,%20apple%20sauce,%20coconut,%20crazy,%20maoynaise,%20poppy%20seed,%20jello,%20chiffon%20or,%20my%20personal%20favorite,%20devil's%20food%20with%20fudge%20frosting.%3C/p%3E%3Cp%3EAs%20to%20the%20cookies....%20I%20have%205%20cookie%20cook%20books,%20all%20from%20the%20U.S.%20%20I%20have%20never%20seen%20a%20cook%20book%20solely%20devoted%20to%20cookies%20here%20in%20France.%3C/p%3E%3Cp%3EOther%20countries%20have%20cookies,%20yes,%20but%20not%20the%20variety%20that%20one%20sees%20in%20the%20U.S.%3C/p%3E%3Cp%3EWhen%20we%20lived%20in%20Andorra,%20I%20made%20lots%20of%20Christmas%20cookies%20and%20gave%20boxes%20of%20them%20to%20our%20friends%20-%20British,%20German,%20Dutch,%20Spanish,%20French,%20Andorran.%3C/p%3E%3Cp%3EThe%20first%20year%20I%20did%20it,%20they%20were%20looked%20at%20rather%20suspiciously.%20People%20poked,%20prodded%20and%20finally%20nibbled,%20not%20quite%20certain%20what%20they%20were%20letting%20themselves%20in%20for.%3C/p%3E%3Cp%3EThe%20next%20year,%20the%20boxes%20were%20grabbed%20and%20gobbled%20and,%20I%20might%20add,%20not%20shared%20(I%20was%20told).%3C/p%3E%3Cp%3EThe%20third%20year%20I%20was%20giving%20the%20recipes%20along%20with%20the%20cookies.%3C/p%3E%3Cp%3EAmerican%20cookies%20can%20be%20more%20strongly%20flavored%20with%20more%20whole%20add-ins,%20like%20chocolate%20chunks,%20raisin,%20cranberries,%20than%20their%20Euro%20counterparts.%3C/p%3E%3Cp%3EI%20previously%20posted%204%20of%20my%20favorites%20Christmas%20Cookies%20(all%20on%20the%20same%20post):%3C/p%3E%3Cp%3EGinger%20Chocolate%20Chip%20-%20like%20a%20ginger%20snap%20but%20with%20dark%20chocolate%20chunks%3C/p%3E%3Cp%3EPeanut%20Butter%20Oatmeal%20-%20the%20perfect%20breakfast%20cookie%20%20-%20also%20with%20chocolate%20chunks%3C/p%3E%3Cp%3ETriple%20Chocolate%20-%20'nuff%20said%3C/p%3E%3Cp%3EIce-box%20Cookies%20-%20my%20mother's%20recipe%20from%20her%20mother.%20%20Butterscotch%20and%20almond,%20these%20are%20great:%20mix%20them,%20roll%20into%20logs%20and%20refrigerate.%20%20When%20ready,%20slice%20and%20bake.%3C/p%3E%3Cp%3EMon%20mari's%20favorite%20are%20Lemon%20Bars.%20%20If%20I%20want%20any%20I%20have%20to%20make%202%20batches.%3C/p%3E%3Cp%3EI%20don't%20have%20a%20photo%20of%20these%20-%20I've%20not%20made%20them%20in%20a%20few%20years%20as%20they%20make%20a%20rather%20large%20batch,%20but%20they%20are%20my%20favorite%20Christmas%20cut-out%20cookie.%3C/p%3E%3Cp%3ERecipe%20from%20Betty%20Crocker's%20Cooky%20Book%20-%20modified%20slightly.%3C/p%3E%3Cp%3EHeat%20molasses%20to%20boiling%20in%20a%20big%20pan.%20%20Remove%20from%20heat%20and%20stir%20in%20butter%20and%20soda.%20%20It%20will%20foam%20up%20considerably%20-%20stir%20vigorously.%20%20When%20foam%20subsides,%20stir%20in%20remaining%20ingredients.%20%20Chill%20dough.%3C/p%3E%3Cp%3ERoll%20dough%20out%20very%20thin%20on%20lightly%20floured%20board,%201/16th%20inch,%20and%20cut%20into%20desired%20shapes.%20%20Place%20on%20lightly%20greased%20cookie%20sheet%20and%20bake,%20350F,%205%20-%207%20minutes%20being%20careful%20not%20to%20over-bake.%3C/p%3E%3Cp%3EI%20used%20all%20shapes%20and%20sizes%20of%20Christmas%20cookie%20cutters%20and%20usually%20got%20around%207%20dozen%20cookies.%20%20They%20are%20very%20crisp%20and%20keep%20well.%3C/p%3E){kind=link}
