  1. Prepare melon balls or possibly cubes (use cantaloup, honeydew and watermelon in season).
  2. Quarter tomatoes, remove seeds and cut into strips.
  3. Peel cucumber and cut into dice. Sprinkle lightly with salt, cover and stand 30 min. Rinse well, drain and dry on paper towel.
  4. Combine melon with tomatoes and cucumber.
  5. Toss with the dressing cover and refrigeratecwo or possibly three hrs. Add in parslcy, mint and chives just before serving.
  6. Serve with warm herb bread.
  7. Serves six.
