Receta Mexican Corn Relish (Aicr)

Ingredientes
- 1 x Diced onion, white
- 1 Tbsp. Canola oil
- 2 c. Corn kernels
- 1 x Red bell pepper, diced
- 1/3 c. Poblano, diced
- 2 Tbsp. Minced cilantro
- 1 Tbsp. Fresh lime juice
- 1/2 tsp Salt
Direcciones
- Saute/fry the onion in the oil, stirring occasionally. Add in corn and cook till tender, 3 to 5 min, then transfer to a medium-size bowl. Add in remaining ingredients. Mix well and serve at room temperature.
- PANTRY: substitute green bell pepper for poblano chili;; white wine vinegar for fresh lime juice.
- NOTES : Corn relish is really a cooked salad.
