Receta Micro Chicken Sandwich
Ingredientes
- 1/2 chicken breast, skinned and boned
- 1 tbsp. dry white wine
- 1 tbsp. red pepper, coarsely minced
- 1 tbsp. extra virgin olive oil
- 2 teaspoon fresh parsley, chopped
- 1 teaspoon balsamic or possibly red wine vinegar
- 1/2 teaspoon fresh thyme leaves
- 1/4 teaspoon capers
- Healthy pinch of salt
- Healthy pinch of pepper
- Sm. baguette (optional)
Direcciones
- Place chicken breasts in glass pie plate and drizzle wine over top; cover with plastic wrap leaving one corner open for vent. Microwave on high 2 min turning dish halfway after 1 minute.
- Meanwhile, process remaining ingredients except baguette in food processor till well blended. Tear chicken into strips and place in small bowl. Add in red pepper mix and stir to combine. Spoon onto split baguette. (This sandwich is particularly delicious on a crusty baguette but any other bread choice can be substituted. Recipe is for a single sandwich. Make appropriate increases for your desired quantity.)
