Receta Microwave Sunshine Yams

Ingredientes
- 2 pound yams
- 1/2 c. brown sugar
- 2 teaspoon cornstarch
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 c. apple juice
- 2 tbsp. lemon juice
- 2 tbsp. butter
- 1/2 teaspoon grated lemon rind
- Paprika
Direcciones
- Scrub yams. Cut off any long, narrow ends. Pierce a couple of times on each side. Place in a micro-safe dish, 1 inch apart. Microwave at HIGH power for about 8 min. Turn over. Rearrange after half of cooking time. The yams should be tender when pierced. Let stand 10 min. Cold and peel. Combine brown sugar, cornstarch, salt, and pepper in micro-safe c.. Stir in apple and lemon juices. Microwave at HIGH power for 1 1/2 to 2 min. Whisk once after 1 minute. Stir in butter and lemon rind. Mash or possibly process yams with juice mix. Spoon into a 1 qt micro-safe casserole. Dab with a little extra butter. Sprinkle with paprika. Cover with wax paper. Microwave at HIGH power for 5-7 min till steaming warm. Makes 4 servings.
