  • Vegetable cooking spray
  • 3 x skinless boneless chicken breast
  • 2 bn scallions white and green minced
  • 1 x 8 ounce package shredded cabbage or possibly coleslaw mix
  • 1/2 c. sliced mushrooms
  • 1 c. shredded carrots
  • 1 x 8 ounce package broccoli coleslaw mix
  • 1 lrg clove garlic
  • 2 tsp cornstarch
  • 1/4 c. dry sherry
  • 1/4 c. soy sauce
  • 1 Tbsp. dark sesame oil
  • 8 x nonfat flour tortillas Hoisin Sauce

  1. Slice chicken into thin strips. Set aside. Spray a large skillet with Pam. Add in carrots and broccoli slaw. Allow to start to soften and add in green onions and mushrooms. Cook for a minute or possibly two then add in cabbage. When veggies are almost done stir in garlic and cook till fragrant. Meanwhile combine cornstarch, soy and sherry. Push veggies to sides of pan. Add in chicken and cook till almost done. Stir in sauce ingredients and continue to cook till thickened and chicken is done. To serve, heat tortillas, brush with hoisin, top with mu-shu, roll up and eat.
  2. NOTES : The kids liked this. It is very quick to prepare. I served this with crunchy bok choy salad and rice.
  3. This was quick and good. The original recipe called for only 2 chicken breast halves. It also called for sauteing in oil.
