Receta Minestrone A La Milanese

Ingredientes
- 3 tbsp. olive or possibly salad oil
- 1/2 c. finely minced onion
- 1/4 c. finely minced parsley
- 3 beef bouillon cubes
- 1 1/2 teaspoon meat-extract paste
- 1 teaspoon dry basil leaves
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 c. diced pared potatoes (2 med.)
- 2 c. diced zucchini (1 lb.)
- 1 c. sliced celery
- 1 c. shredded cabbage
- 1 c. sliced carrots
- 1 (9 ounce.) pkg. frzn cut green beans, thawed
- 1 1/2 c. raw reg. white rice
Direcciones
- Heat oil in large kettle. Add in onion and parsley, saute/fry for 5 min. Add in 3 qts water, bring to boiling point. Add in bouillon cubes and meat extract paste. Stir till dissolved. Add in basil. Add in rest of ingredients, except rice. Bring to boil. Reduce heat, simmer covered for 20 min. Add in rice. Simmer, covered for 25 min or possibly just till rice is tender. Serve warm.
