  1. Blend cream cheese, sugar, Large eggs and almond extract on low speed till combined. Beat on medium speed till smooth (2 to 3 min). Arrange 2 inch foil cupcake liners in 1 1/2 inch muffin c. pans, pushing paper down lightly. Arrange vanilla wafer in each c., spoon cream cheese mix in c. to within 1/8 inch from top.
  2. Bake in a preheated 350 degree oven till set but not browned (20 to 25 min). Cold to room temperature (about 30 min). Chill, covered, up to 36 hrs. To serve: Arrange strawberry fans on each cheesecake. May be refrigerated, covered, up to 2 hrs. Amount: 24 cheesecakes.
  3. LIME VARIATION: Substitute 1 Tbsp. lime juice and 2 tsp. grated lime peel for almond extract. Garnish with sliced quartered kiwi.
