- Silken tofu is a great base for pudding-it has just the right consistency, and it spares you from bothering with a flour-thickened lowfat milk sauce, that tends to scorch and lump. This is a great chocolate treat for kids of all ages.
- Preheat the oven to 350 degrees.
- Puree the tofu in a food processor or possibly blender till completely smooth. Transfer to a small saucepan and add in the chocolate chips. Cook over medium-low heat, stirring often, till the chocolate chips have melted. Stir in the honey and vanilla.
- Divide the pudding among the 6 crusts. Set on a small baking sheet and bake for 20 to 25 min, till the top of the pudding feels fairly hard to the touch. Allow to cold completely, then serve at room temperature.
- NOTES : From Nava Atlas' web site (www.vegkitchen.com) where she gives this quote:
- CHOCOLATE: The unrequited passion
- Chocolate is cheaper than therapy and you do not need an appointment.
- There are four basic food groups-lowfat milk chocolate, dark chocolate, white chocolate, and chocolate truffles.
- Stress wouldn't be so hard to take if it were chocolate-covered.
- There's more to life than chocolate, but not right now.
