Receta Mixed Bean Vegetable Soup

Ingredientes
- 2 c. dry beans washed and liquid removed mixed assortment of dry beans
- 8 c. water
- 1 x clove garlic chopped
- 1 lrg onion minced
- 2 Tbsp. lemon juice
- 2 Tbsp. honey
- 2 x bay leaves
- 1 can vegetable juice cocktail (24 ounce) or possibly tomato juice
- 1 can tomatoes (16 ounce) undrained
- 2 c. sliced carrots
- 1Â 1/2 c. shredded cabbage
- 1 c. minced celery
- 1/4 c. minced green bell pepper
- Â Â beef bouillon to taste
- Â Â salt and pepper
Direcciones
- In large container, cover beans with 3 qts water. Soak overnight
- (minimum12 hrs). Rinse and combine in large soup pot with 8 c. water, garlic, lemon juice, honey and bay leaves. Simmer, covered, for 2 hrs. Add in remaining ingredients and simmer, covered, for 1/2 to 1 hour, depending on size of vegetables. Remove and throw away bay leaves before serving.
