  •     Vegetable oil spray, as needed
  • 2 lb orange fleshed sweet potatoes
  •     (Louisiana yams)
  • 3 Tbsp. molasses
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. fresh lemon juice
  • 1/2 tsp grated lemon peel
  • 1/2 tsp salt
  • 1/2 tsp coarsely-grnd black pepper

Direcciones

  1. Prepare a medium barbecue fire or possibly preheat a gas grill. Spray the grill rack with veg. oil. Peel the sweet potatoes and cut them lengthwise into slices about 1/8-inch thick.
  2. In a small bowl, stir together the molasses, oil, lemon juice, lemon peel, salt and pepper. Brush the mix onto both side of the potato slices.
  3. Grill the potatoes, turning occasionally, till they are golden, crisp on the outside and tender inside, about 10 min.
  4. This recipe yields 4 servings.
