Receta Mondongo Elegante Elegant Tripe

Ingredientes
- 1 lb Tripe
- 2 x Pigs' Feet, Thoroughly Wash
- 1 quart Water
- 1 lrg Onion
- 1 x Bay Leaf
- 1 sprg Parsley
- 2 x Cloves Garlic
- 8 x Peppercorns
- Â Â Salt
- 2 Tbsp. Extra virgin olive oil
- 8 ounce Tomato Sauce
- 1/4 lb Minced Uncooked Ham
- 1 c. White Table Wine
- 1 Tbsp. Capers Or possibly To Taste
- 3 ounce Pimento Stuffed Olives
Direcciones
- Place tripe, pigs' feet, water, onion, bay leaf, parsley, garlic, peppercorns, and salt in kettle. Cover and simmer till tender. Cold.
- Remove meat from broth, strain and reserve 2 c. of broth. Remove bones from pigs' feet. Coarsely chop pigs' feet and tripe. Set aside. Wilt onion in oil, add in tomato sauce, cook for 5 min. Add in broth, ham, tripe, pigs' feet, and wine. Adjust seasoning, simmer a few min longer, then add in capers and olives.
