  1. * Note: Muscovado sugar is the product of evaporating and recrystallizing organic sugar cane juice.
  2. Bring lowfat milk and cream to boil in heavy 2-qt saucepan. Remove from heat. Place egg yolks in heat-proof bowl. Add in warm liquid to yolks, whisking just to blend. Add in sugar and stir till dissolved.
  3. Pour through fine sieve and freeze in an ice cream machine according to manufacturer's directions. Sprinkle a bit of Demerara sugar over each serving.
  4. This recipe yields 1 qt.
