Receta Muscovado Sugar Ice Cream

Ingredientes
- 2 c. lowfat milk
- 2 c. whipping cream
- 8 x egg yolks
- 6 ounce muscovado sugar - (to 8 ounce) see * Note
- Â Â Demerara sugar for garnish

- * Note: Muscovado sugar is the product of evaporating and recrystallizing organic sugar cane juice.
- Bring lowfat milk and cream to boil in heavy 2-qt saucepan. Remove from heat. Place egg yolks in heat-proof bowl. Add in warm liquid to yolks, whisking just to blend. Add in sugar and stir till dissolved.
- Pour through fine sieve and freeze in an ice cream machine according to manufacturer's directions. Sprinkle a bit of Demerara sugar over each serving.
- This recipe yields 1 qt.
